Blueberry Lavender Ice Cream

You know you have some really good people in your life when you have friends who send you messages like, “Do you want to come pick up some homemade Blueberry Lavender Ice Cream?”  Ummmmmm….Yes, new favorite-friend-in-the-entire-world, I DO want to come pick up some homemade Blueberry Lavender Ice Cream! ?

I am so lucky because my friend, Kalinda, lives about 4 minutes from me and she’s always cooking amazing dishes. Yay for me! ?? This ice cream is sooooo freaking delicious. So refreshing and different! So good that it’s fit for a Prince! One of my rescue kitties, Prince Pumpkin, could not keep his little kitty nose out of it. The prince loves good food…Lol. How could anyone NOT love this though? Kalinda also gave me several Lavender Lemon cookies that she made, using Colleen Patrick-Goudreau’s recipe, and those were amazing as well! Like I said, I am lucky she lives so close by! Also fortunate that she happily offered to share the ice cream recipe with me so I could share it with you guys! Yay! ?

Blueberry Lavender Ice Cream

  • 2 Cans Chilled Coconut Milk
  • 1 Cup Frozen Blueberries
  • 1 Cup Sugar
  • 1 Tbsp Vanilla Extract
  • 2 Tbsp Dried Culinary Lavender
  • 1/2 Cup Raw Cashews (soaked)
  • 1/4 Tsp Xanthan Gum (optional)


  1. Prep - Make sure you have soaked your cashews for at least a couple of hours
  2. Place all ingredients in Vitamix or other blender and blend until all ingredients are combined
  3. Once everything is blended, add Xanthan gum and give it a few more pulses
  4. Scoop everything into ice cream maker. Freeze in ice cream maker according to manufacturer's directions and enjoy!
