Bombdiggity Bombay Popcorn

I love popcorn and pretty much every other salty snack on the planet. Salty snacks are my very favorite and that definitely includes popcorn! Yumm! Last weekend was super busy. I had a parade to march in and inspectors coming to my home (thanks, Hurricane Irma ?) and a million things to do. I was set on go-go-go mode and I really wanted an easy snack that I could just leave out and munch on through the day for extra energy. Popcorn totally fit the bill, but I decided to skip out on the plant-based butter and take a different route instead. I used a little coconut oil and I added in some of my favorite healthy seasonings before popping the kernels….My own little spin on the typical Bombay popcorn. It was delicious and my kitchen smelled amazing while it was popping! Perfect snack for a fall weekend!

If you don’t have or don’t care for the spices I used, just create your own mix! Use a little more or a little less..Skip the salt or add extra. You really can’t mess this up. ? Enjoy and just put your own twist on it! ???

PS: Did you know that almost all movie theater popcorn is vegan? Even the liquid butter! I’m not saying heavily buttered popcorn is the healthiest option, I’m just sharing info ?

  • 1/2 Cup Popcorn Kernels
  • 1 Tsp Coconut Oil
  • 1 Tsp Cumin
  • 1 Tsp Coriander
  • 1 Tsp Smoked Paprika
  • 1 Tsp Curry Powder
  • 1 Tsp Turmeric
  • 1 Tsp Sea Salt


  1. Heat coconut oil in pot over medium heat. (be sure your pot has a lid and is large enough to handle the popped corn as it pops and expands)
  2. Once the oil has melted, add the popcorn kernels and all of the spices, including the sea salt (if you're using salt
  3. Use a spatula or spoon to mix the kernels with the spices or just simple shake the pot a few times to make sure the kernels are covered in the seasonings
  4. Cover pot with lid and wait for the popping to begin.
  5. Shake the pan occasionally to prevent burning
  6. Once the popcorn has finished popping, remove from heat and wait a minute or so before removing the lid. I usually like to move the lid over just a tiny bit during this time...Just to safely cool things down a little quicker
  7. Pour into a big bowl and enjoy!
